Description

Beer yeast refers to the yeast used for brewing beer. Most of them are different varieties of Saccharomyces cerevisiae. The cell morphology is the same as that of other cultured yeast, which is a nearly spherical ellipsoid.
Beer yeast is a typical top fermentation yeast commonly used in beer production. The bacteria have high vitamin and protein content, and can be used as edible, medicinal and feed yeast. It can also extract cytochrome c, nucleic acid, glutathione, coagulant, coenzyme A and adenosine triphosphate. In the microbiological determination of vitamins, beer yeast is commonly used to determine biotin, pantothenic acid, thiamine, pyridoxine and inositol.
